Guest guest Posted April 8, 2007 Report Share Posted April 8, 2007 Greek Garbanzo Bean Salad 1 15 oz. can garbanzo beans, drained and rinsed 2/3 cup minced scallions 3 cloves garlic, pressed 1 ripe tomato, seeds removed and chopped 3 stalks celery, diced into 1/2 inch pieces 3 tbsps. fresh lemon juice 2 1/2 tbsps. fresh mint, chopped 3 tbsps. fresh parsley, chopped extra virgin olive oil to taste 1/2 cup feta cheese, optional 1 small head chopped romaine lettuce, outer leaves removed salt and cracked black pepper to taste Mix all ingredients except lettuce and cheese in a bowl and season with salt and pepper to taste. Serve on bed of chopped romaine lettuce and sprinkle with feta cheese. Makes 4 servings. Calories 129, Fat 1.2 g, Carbs 25 g, Fiber 6 g. All new Mail Get news delivered.
