Crockpot Enchilada Casserole Answer for Stef

Hi Stef...sorry the answer is taking so long im so busy here.

It is tnt recipe and what i do is save a cup of the sauce to use at the

table if it looks like to much. But it doesn't go soupy.

It does freeze well, I make it up and freeze in small trays big enough

for lunch or a quick dinner with a salad.

I made this and added a little extra beans and used it to fill a polenta curst

pie. It was really good. It did not look like anything my husband had seen

before and he asked what it was. I just told him it was a black bean pie.

After one bite he was so glad it was just the two of us for dinner cause he had

decided he did not want to share. We ate the whole thing.
