Guest guest Posted April 7, 2007 Report Share Posted April 7, 2007 New Potatoes & Spring Leeks 6 - 10 new potatoes (could also use fingerlings) 2 medium leeks up to 1 Tbs olive oil Slice potatoes into thick slices, 1/4 inch or so. Place in a skillet and cover with water. Boil until potatoes are about half-cooked. Trim and slice leeks lengthwise, clean thoroughly and slice crosswise in thin slices. Drain potatoes, add leeks and a little olive oil. Cover and cook until the potatoes are completely tender, about 30 - 40 minutes (I lost track).
