Guest guest Posted April 4, 2007 Report Share Posted April 4, 2007 @@@@@ Tortellini and Broccoli Salad - 6 pts 1 pkg (16 oz) cheese or meat-filled tortellini 3 c broccoli florets 1/4 c olive oil 2 Tbsp red wine vinegar 1 Tbsp coarse grain mustard 2 cloves garlic, minced 2 tsp honey 2 tsp dried basil 1/2 tsp salt 1 small red onion, chopped 4 scallions, sliced 1/2” thick 1/2 pt cherry tomatoes, halved 3/4 c (3 oz) shredded Romano cheese 1. Prepare tortellini according to package directions. Add broccoli during the last 3 minutes of cooking. Rinse under cold water and drain. 2. In a large bowl, whisk together oil, vinegar, mustard, garlic, honey, basil, and salt. Add tortellini, broccoli, onion, scallions, tomatoes, and cheese. Toss to coat well. 3. Serve immediately or refrigerate up to 24 hours.
