We just got back from a Caribbean Cruise and they served them there in different flavors every day and they were so light, creamy and delicious. I'd love to find one that you have enjoyed. I am wondering if theisr had mascarpone cheese in it. I've seen that on cooking shows before, but never looked for any in the grocery store. Where do you find it in your grocery store? In a pinch, you could use 1/2 pound of ricotta cheese with 1 cup of heavy cream (process in the food processor until consistent).
