I became a full time vegetarian 2 ½ years ago when I went to the doctor and he told me I was pretty much a heart attack waiting to happen. My cholesterol was terrible and my triglycerides were even worse. I knew I had to go back on my low-fat diet and the easiest way for me to do that is to completely cut out meat. I don’t think I can go vegan because I’d miss cheese – even though I eat only fat free or low fat cheese, it’s still cheese! I like most veggies (except squash – where’s the memo that says all vegetarians love squash???) so it isn’t that difficult for me. My son, who just turned 16, eats only veggie meals at home, but he still eats meat when he’s with his sister or friends. We’ve converted most of our old tried and true recipes to veggie. I think I think better since I’ve cut meat out of my diet, and I haven’t been as sick as I used to be. And since I’ve developed quite a few weird, sudden allergies, a vegetarian diet is definitely for me. But we’re bored with the same old recipes every week. I’ve come up with a few things that he loves – these rice burritos with santa fe style vegetables, he’ll eat those until there aren’t any left. Anyway, I just thought I should say “hi” to you all.
