Guest guest Posted April 3, 2007 Report Share Posted April 3, 2007 The Best Potato Skins 3 Idaho baking potatoes Vegetable oil 3 or 4 tbsp. olive oil 1 to 2 cloves garlic, minced Salt, pepper, paprika or cayenne to taste 2 tbsp. grated Parmesan cheese 1 to 2 tbsp. minced parsley Wash and scrub potatoes; pat dry. Rub potato skins with oil. Bake in a 425 degree oven for 1-1/2 hours or until done. Remove potatoes from oven; cool. Cut in half and carefully scoop out centers, leaving about 1/4 to 1/2-inch layer of cooked potato. Cut each half potato skin into 3 lengthwise wedges. Place on baking sheet; brush insides of potatoes generously with olive oil. Sprinkle with garlic, seasonings, cheese and parsley. Return to oven and bake for 20 to 25 minutes until crisp and lightly browned. Makes 18 pieces.
