Pineapple Date Bars (vegan)

 

20 ounces crushed pineapple

2 cups chopped dates

3 cups oats

1 cup wheat germ

1 cup coconut

1 cup chopped walnuts

3/4 teaspoon salt

1 1/4 cups orange juice

1/4 cup oil

 

Combine pineapple and dates in a saucepan. Cook over

medium heat until thickened. Stir frequently.

In a large bowl, mix oats, wheat germ, coconut,

walnuts, and salt. Stir in juice and oil. Press half

of the oat mixture into a greased 9 x 13-inch pan.

Spread the pine-apple mixture on top, and then

sprinkle on remaining oat mixture. Press down lightly.

Bake at 350 degrees for 30 minutes or until lightly

browned. Cool. Cut into squares.

Makes 32 squares.
