Broccoli Potato Latkes

 

2 lbs. broccoli, chopped into small pieces

4 lbs. potatoes, scrubbed and cubed into small pieces

2 large onion, peeled and finely chopped

6 cups water

1 tsp. celery seed

salt and pepper to taste

8 tbsps. olive oil

 

Cook all the ingredients (except the oil) in a large

covered pot over medium heat for 20 minutes. Drain

mixture. Mash ingredients together. Form 20 pancakes.

Heat 2 tbsp oil in large non-stick frying pan over

medium heat. Fry five of the latkes for 8 minutes on

one side. Flip and fry for another 5 minutes on the

other side. Serve warm. Repeat with remaining oil and

latkes.
