Guest guest Posted March 25, 2007 Report Share Posted March 25, 2007 I have never had poke salat but when I used to live in eastern Okla.(20 some years ago) my friends would gather poke (its a green that grows wild)and they would cook it with lambs quarters (wild spinach) and some other purchased greens. They would put it in a big pot and boil it. They also added bacon bits and chopped wild onion. I wish I had the recipe cause you can always use those soy bacon bits.
