Also lasagna is easy to make vegetarian by leaving out the meat and adding veggies to it or you can just make it cheese lasagna. If you buy ready made refried beans make sure they are the vegetarian or fat free variety. I keep these in my pantry at all times, they are quick and easy and my son makes them a lot. Guest guest Posted March 24, 2007 Report Share Posted March 24, 2007 Veg refried beans are really good in this recipe: 1 can refried beans mixed with 1/4 cup salsa smoothed into a pie tin (I use silicone or pyrex) then covered with a layer of grated cheddar cheese. Bake 325f for about 30 minutes, just until warmed thru with cheese melted and a hint of brown. Great with tortilla chips or Fritos scoops. I make this for family gatherings and the non-vegetarians glom onto it while I try to chase them over to " their food.
