Guest guest Posted March 23, 2007 Report Share Posted March 23, 2007 Tomatoes are made to freeze and they are so easy. I simply put a pan of water on the stove and let it get to boiling. Put the tomatoes in for about 4-6 minutes, get them out on a fork and then dunk them in cold water to stop " cooking " , Slip the skin off and they are then considered peeled. Chop them up if you want now or cut them inj 1/2 or 1/4 pieces and them you can chop them before adding to chile sauce, tomato sauce. Them put them in a baggie with a bit of water(a very little bit) and pop the bag into the freezer after putting the date on the outside. When you are ready to use them, run one frozen tomato at a time under warm running water and the skins will pull right off. No need to process them in any way before freezing. Cherry and grape tomatoes can be frozen whole and, if only defrosted about halfway, can be used in salads after being frozen.
