Guest guest Posted March 23, 2007 Report Share Posted March 23, 2007 Try this from the recipes files. This is the very first vegetarian dish I took from our files to my non-vegetarian family potluck. It was gone so fast I should of made 3 or them. Kenia Con " Quiche " tador 1 deep dish pie shell (make your own or store bought) 4 large eggs 3/4 cups whole milk or cream 1/2 tube of Soyrizo (vegetarian chorizo) 1 (4 oz) can mild green chilies, chopped 1/2 onion chopped 1 tsp. cumin 1 tsp. chili powder 1 tsp. pepper 1/2 cup shredded cheddar cheese Garnish ----------- sour cream lettuce sliced olives diced tomatoes chopped cilantro Preheat oven to 350 degrees Line a quiche dish with crust and poke bottom of crust with fork making a few holes. Fry up the Soyrizo with onion and spices until crumbled and cooked through and onion is tender. Layer Soyrizo mix on pie crust shell, layer chiles, layer cheese. Beat eggs, milk or cream together with a dash or salt, and pour over layers in pie crust. Bake for 45 minutes or until knife inserted in center comes out clean.
