Dandelion Soup

2 qt. dandelion greens, (pick away from the road side for health

reasons) loosely packed

2 qt. Noodles (any kind) you can use rice if you do not care for

noodles

1 lb. Soya mince

1 egg or replacement

3 Tbsp. bread crumbs

2 Vegetable bullion cubes

2 Tbsp. minced parsley

1 Tbsp of Corn flower

1 Tbsp. finely chopped onions

1/4 tsp. salt

1/8 tsp. pepper

dash of all spice

3 Tbsp. Parmesan cheese (Veggie)

3/4 Tbsp. sour cream or greek yoghurt.

A glass or two of chilled Blossom Hill goes very well while preparing

this soup.

 

Bring Vegetable bullion cubes to a boil.

Add dandelions.

Add the corn flower to thicken.

Cook gently.

Drink some wine.

Rice or noodles can be added (1/2 cup rice or 2qt noodles).

Make tiny veggie meat (hate having to use the word Meat but nothing

else describes it) balls out of remaining ingredients.

When greens are tender, add veggieballs and cook gently 10 minutes or

until balls are thoroughly cooked.

Serve hot with home made granary bread and more glasses of chilled

wine.
