Guest guest Posted March 22, 2007 Report Share Posted March 22, 2007 Pumpkin-Banana-Walnut Bread 2 cups wholewheat pastry flour 2 tsps. baking powder 1 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. salt 2 bananas, ripe, mashed 1 cup pumpkin, cooked, pureed 1/4 cup maple syrup 1/4 cup oil 1 tsp. vanilla 1/2 cup walnuts, chopped Preheat oven to 350 degrees. Lightly oil a loaf pan, set aside. Sift together flour, baking powder, cinnamon, nutmeg and salt. Blend the remaining ingredients, except the walnuts, until smooth. Stir wet ingredients into dry ingredients until just combined. Fold in the walnuts. Spoon batter into prepared loaf pan. Bake until a knife inserted into the centre comes out clean, approximately 1 hour. Cool on a wire rack before slicing. Serves 12. ______________________________\ ____ Food fight?
