Guest guest Posted March 22, 2007 Report Share Posted March 22, 2007 Basil Preserved in Oil 2 cups basil leaves, stemmed, washed and spread to dry on a towel 2 tablespoons salt 1/2 cup olive oil Put a layer of basil leaves in a jar, sprinkle with salt, and continue to make layers of basil and salt until the jar is three quarters full. Fill the jar with olive oil, then seal it and store in a cupboard. The basil will be ready to use after a month. Basil preserved this way may be used wherever you would be using salt and oil as well as basil: in salads, for instance, or sweated with the vegetables for soups and stews.
