Guest guest Posted March 18, 2007 Report Share Posted March 18, 2007 Toffee Banana Bread 3/4 c butter-flavored shortening 1-1/2 c sugar 4 eggs 1-1/2 tsp vanilla extract 3 c all-purpose flour 1-1/2 tsp baking soda 1-1/2 tsp salt 1/2 tsp cinnamon 4 to 5 large ripe bananas, mashed 1 c toffee bits (such as crumbled Heath Bars) Grease and lightly flour 2 loaf pans. In a mixing bowl cream together the shortening and sugar. Add the eggs and vanilla, and mix until creamy. In a separate bowl combine the flour, baking soda, salt and cinnamon. blend the dry ingredients into the creamed mixture. Fold in the mashed bananas and the toffee bits. Pour the mixture into the prepared pans. Bake in a 350F oven for 1 hour.
