Guest guest Posted March 18, 2007 Report Share Posted March 18, 2007 There have been several discussions around diabetes and vegetarians, I even asked questions several months back after being diagnosed as type 2 in December 06. I found an interesting cookbook at Barnes and Noble last week that has help me to better understand the glycemic index and how to incorporate it into a vegetarian diet. It is called The New Glucose Revolution-Low GI Vegetarian Cookbook by Dr. Jennie Brand- Miller, Kay Foster Powell, Kate Marsh ans Philippa Sandall. Some of the recipes are still a bit high in carbs, but they supposedly have an acceptable glycemic index. Since I am on a low carb diet now, I am sticking to those recipes lower in carbs until I attend my nutririon class next month. I have lost 23 lbs, and my average glucose for the last 30 days has been 102. I hope to eventually stop taking Meformin. Hope this book may help others with some of the quesrions recently posed.
