Guest guest Posted March 18, 2007 Report Share Posted March 18, 2007 Sunny Sunflower & Mushroom Bulghur 2 tablespoons butter or oil 3/4 cup sunflower seeds 1 small onion -- chopped 1/8 teaspoon salt 1 chile pepper minced 1 cup bulgur 1 3/4 cups water AND 1/4 cup low sodium soy sauce 2 cups vegetable stock 1 cup thinly sliced mushrooms 2 tablespoons minced parsley (optional) Toast the sunflower seeds in half of the butter and set aside. Saute onion in the rest of the butter or oil or combination. Stir in bulghur and saute chile stirring for 3 minutes. Add liquids and salt and pepper. Cover and simmer for 25 minutes. Stir in thinly sliced mushrooms. Cover tightly and let sit off of the heat for 5 minutes. Stir in sunflower seeds and serve. Garnish with parsley. ______________________________\ ____ Bored stiff?
