Oh the misery!! I love cashews, buty I am allergic to them and am being sorely

tempted. Any other nut I could easily omit from my diet, but cashews are my

absolute favorite. I don't eat chocolate, so cashew cookies, cake, and even ice

cream were my favorite deserts until I developed the allery. Katie

3/4 cup firmly packed light brown sugar

1/2 cup sugar

1 egg

1 tsp vanilla extract

2-1/4 cups all-purpose flour

Beat butter at medium speed of an electric mixer; gradually add

sugars, mixing well. Add egg and vanilla; beat well. Combine flour,

soda, and cream of tartar; gradually add to creamed mixture, mixing

after each addition.

 

Stir in cashews. Drop cookie dough by rounded teaspoonfuls onto

lightly greased cookie sheets, and bake at 350 degrees F. for 10 to

12 minutes or until lightly browned.

 

Yield: about 7 dozen.
