These pancakes sound good, but I'm wondering if they'll be too sweet for Easter Brunch. What does everyone think? Also......what to serve with them? Usually we have boiled eggs, and sometimes lemon poppy seed cake and cinnamon rolls, but now that there are no young children in the family, I'm hoping for something a little different. Anyone have any ideas? Caramel Apple Pancakes 1/2 cup packed brown sugar 1/4 cup (1/2 stick) butter 3/4 T ground cinnamon 2 apples, peeled, cored, and cut into thin rings 1 cup pancake and waffle mix 1 teaspoon ground cinnamon 3/4 cup milk 1 large egg, beaten 1 tablespoon butter, melted 1/2 cup pancake syrup, warmed Melt 1/4 cup butter in large skillet add brown sugar and 3/4 teaspoon cinnamon, cook and stir until sugar is melted. Add apples, cook and stir until apples are tender, 5-7 minutes. Keep warm. Combine pancake mix, and 1 teaspoon cinnamon in medium bowl. Add milk, egg and 1 tablespoon melted butter, stir with wire whisk until large lumps disappear. Let stand 1-2 minutes. Cook on hot griddle according to package directions.
