Guest guest Posted March 16, 2007 Report Share Posted March 16, 2007 Brown Rice, French Lentil Vegetable Pilaf 3/4 cup Cal Brown Rice 1 tbsp. French Lentils (or regular lentils) 1 Cinnamon stick 1 1/2 cup vegetable broth 1 tbsp. Olive Oil 1/2 cup Onion, finely chopped 1 tsp Garlic, chopped 1/2 cup Peppers, sweet, red, chopped 3 tbsp. Chives, chopped 1/4 cup Roasted pecans, chopped Salt and pepper to taste Instructions for Preparation In a medium saucepan bring broth to a boil. Stir in rice, lentils and cinnamon stick. Bring to a boil. Reduce heat to low, cover and simmer until all liquid is absorbed, about 45 minutes. Remove from heat; let stand covered, 5 minutes. Meanwhile in a 10-in skillet, heat oil with medium high heat, sauté onion and garlic, until soft but not brown, add to the pan, red pepper and continue to sauté for 2 minutes. Remove from heat and set aside. Place hot rice mixture in a bowl. Add to rice mixture the sautéed vegetable mixture, pecans and chives. Gently stirring to mix.
