Oatmeal Pancakes 1 c +1/8 c milk 2/3 c quick oats 2/3 c flour 3 Tbsp brown sugar 1 1/2 tsp baking powder 1/4 tsp salt 1/4 tsp cinnamon 1 egg, beaten 2 tsp cooking oil 1/4 tsp vanilla Heat milk until hot, remove from heat, stir in oats, cover and let stand 5 minutes. In a medium bowl, stir together flour, brown sugar, baking powder, salt and cinnamon. Make a well in the center for liquid ingredients. In a small bowl stir together egg, oil and vanilla. Add egg mixture and oats mixture all at once to flour mixture, stir til combined. Cook on lightly greased skillet or pan as usual. Makes 6-8 pancakes.
