I'll have to try it soon and post it. My Iranian friends made this wonderful Spinach Quiche that is like a frittata. She gave me the recipe recently and I bought a large bag of fresh spinach at Sam's Club. I plan on making it one day this week. Here it is. She doesn't really measure, so adjust to taste your preference. This is really great eaten just like this. It will be like a large round disc. Cut it like a pie, into wedges. Recently I popped in to see her and she gave me a slice of it, put into a ww pita pocket. That was a great combo and would be great to take on a picnic or for lunch at work. Spinach Quiche 2 lb. bag of fresh Spinach, finely chopped 1/2 t.salt 1/2 t. tumeric 1/8 t. lemon juice 5 eggs Green onions, chopped fine Mix well and put in a pan with oil. Brown covered in a frying pan, then flip and brown on the other side. In a few, her main character makes a dish involving leftover pasta, eggs, and whatever is leftover in her fridge. I think it is a frittata, but haven't been able to find good directions for making this dish. She takes the leftovers, adds whipped eggs (and maybe more,) and then fries it in a skillet.
