Guest guest Posted March 12, 2007 Report Share Posted March 12, 2007 Potato and Sausage Soup (Tofurkey sausage) 2 tbsps. olive oil 3/4 cup diced celery 2 cups sliced leeks 1/4 cup diced red pepper 3/4 cup diced carrots 2 tbsps. flour 4 cups vegetable stock 2 cups diced peel potatoes 2 to 3 Italian sausages (I use Tofurkey brand), sliced 1/4 tsp. salt 1/4 tsp. dried marjoram In a large saucepan, heat oil. Saute carrots, celery, leeks and red pepper until softened, but not browned, stirring occasionally. Add flour, stirring for 2 minutes. Blend in broth; add potatoes and simmer until vegetables are tender. Saute sausages until heated through and browned. Add sausages, salt and marjoram to soup.
