This is fast and tasty.

Vegetable Posole

 

1 cup onion, chopped

4 garlic cloves, chopped

1 1/2 cups mushrooms, quartered

2 carrots, sliced

1 cup green beans, cut into 2-inch pieces

2 cups acorn squash, chopped

2 cups canned tomatoes

1 29 ounce can hominy

1 pinch salt

2 tsps. dried cumin

2 tsps. dried oregano

black pepper to taste

cilantro, fresh to taste

 

Brown the onions and garlic in a little oil. Add the

vegetables to the browning onions and garlic. Add the

tomatoes and cook until vegetables start to soften

about 10-15 minutes). Add the hominy, salt, cumin and

oregano.

Cook until all vegetables and the hominy are soft

(another 10-15 minutes). Top with black pepper and

chopped cilantro.

Serves 4.
