It really got me going and we had a big ol' curry dinner tonight Start to finish only 55 minutes kitchen time for rice, 2 curries & a tomato-avocado salad! We had: Kesar Pilau * 1 cup rice * 2 cups water * 2 green cardamom pods, bonked slightly open * 2 whole cloves * a pinch of saffron threads, dissolved in 1 tsp water * 1/3 cup mixed cashews, almonds and golden raisins * 1 tsp oil, then 1 tsp later * 1/3 cup frozen mixed diced vegetables or peas, thawed * salt OPTIONAL: After rinsing the rice, cover it with water in a bowl and let it soak for an hour. Drain and proceed. 1. In a medium-sized skillet, heat the oil until it is sizzle-hot. Add the whole cloves, cardamom pods, and half of the raisin-nut mixture. 2. When the cashews are golden-brown, add the rice, 2 cups water, saffron water and salt. Bring to a boil, then cover and simmer for about 15 minutes. 3. In a small skillet, heat 1 tsp oil and roast the remaining nuts with the mixed vegetables. When the nuts are golden-brown, pour the pan's contents over the cooked rice. Done. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Broccoli Curry This dish turned out beautifully for both Trobee and Trina. It is (adapted a bit) from the kitchen of Lakshmi, who is originally from the South Indian state of Andhra Pradesh. It is flavorful, yet mildly spiced, without sauce. Thank you, Lakshmi! We dig it. * 1 small head of broccoli, cut into florets * 1 potato, cubed * 2-3 tsp oil * ½ tsp urad dal (I skipped this cuz I didn't have any) * ½ tsp black mustard seeds * 1 cup onion, chopped * 1/2 tsp cumin powder * ½ tsp garlic paste or minced garlic * ¼ tsp turmeric * ¼ cup corn * salt 1. Steam the broccoli on the stovetop or in the microwave with 1 TB water for 6 minutes. You want it to be soft but firm. 2. Boil the potato until it is cooked through, but not soft enough to mash. 3. Get out your skillet and heat the oil until sizzle-hot. Add the urad dal and black mustard seeds, and cook until the dal is light brown. 4. Now add the onion and potato cubes. Cook until the onion is golden-brown. 5. Add the garlic paste, cumin powder and turmeric. Cook for 1 minute. 6. Add the broccoli, corn, and salt to taste, and cook about 5 more minutes. Done. ~~~~~~~~~~~~~~~~~~~~~~~~~ omg this is DE-licious!! Seitan 'Makhani' * ½ package seitan, cubed (8 oz.) (I used Morningstar chicken strips) * 1 Tb oil * ½ cup onion * ½ inch cinnamon stick * 2/3 tsp garlic paste * ¼ tsp turmeric * 1 tsp paprika or cayenne * 2 tsp coriander powder * ¼ cup almonds, ground * ½ cup tomato sauce * ¼ cup plain yogurt 1. In a medium skillet, heat the oil until it is sizzle-hot. Add the onions and the cinnamon stick and saute until the onions are soft and clear. 2. Add the garlic paste, followed by the turmeric, paprika or cayenne, and coriander. Cook until everything is light brown. 3. Add the seitan pieces and salt, cook just 3-4 minutes. Add the ground almonds and tomato sauce and stir. Simmer for another 25 minutes. 4. Now stir in the yogurt. Heat through. Done. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Tomato-Avocado Salad (this is mine, not from Naughty Curry) 1/2 a small red onion, diced 1 med red tomato 1 ripe avocado splash lime juice Put everything in a bowl and bang it (the salad, not the bowl) around a bit until the avocado is all smeary.
