Guest guest Posted March 11, 2007 Report Share Posted March 11, 2007 HEART FRIENDLY HUMMUS 1 15-ounce can garbanzo beans, drained (reserve juice) and rinsed 1/2 teaspoon olive oil 1/2 cup minced yellow onion 1 teaspoon minced garlic 1 teaspoon paprika 1 1/2 tablespoons lemon juice Cayenne pepper, to taste 1/2 cut nonfat yogurt Heat oil in small skillet over medium heat. Add onion and garlic, and cook for a minute, stirring. Remove from heat. Combine remaining ingredients except yogurt in a food processor, and puree until smooth. Add yogurt and pulse to combine. If the mixture is too thick, add some of the reserved liquid from the beans. Serve with chips, vegetables or crackers. Makes 2 cups.
