Walnut,Garlic and Mushroom Risotto

 

2 tb Olive oil

1 Onion; finely chopped

1/2 lb. Large flat mushrooms; chopped

1/2 cup Chopped walnuts

6 Cloves garlic

1/4 tsp Grated nutmeg

3 ounces White wine

2 cups Cooked rice

1 tb cream or soy milk

Salt

Chopped fresh parsley; to garnish

 

Heat the olive oil in a large saucepan, add the onion,

garlic cloves and saute

gently for 5-10 minutes or until it begins to brown.

Add the mushrooms, walnuts and spices and cook for 5

minutes, or until the mushrooms have softened, adding

a little more oil, if necessary.

Add the wine, season with salt and simmer for a

further 2 minutes or

until the mushrooms are tender.

Stir in the rice and cream and heat through gently,

stirring constantly.

Remove the cloves, if wished, and serve hot, garnished

with chopped parsley.
