Guest guest Posted March 10, 2007 Report Share Posted March 10, 2007 Walnut,Garlic and Mushroom Risotto 2 tb Olive oil 1 Onion; finely chopped 1/2 lb. Large flat mushrooms; chopped 1/2 cup Chopped walnuts 6 Cloves garlic 1/4 tsp Grated nutmeg 3 ounces White wine 2 cups Cooked rice 1 tb cream or soy milk Salt Chopped fresh parsley; to garnish Heat the olive oil in a large saucepan, add the onion, garlic cloves and saute gently for 5-10 minutes or until it begins to brown. Add the mushrooms, walnuts and spices and cook for 5 minutes, or until the mushrooms have softened, adding a little more oil, if necessary. Add the wine, season with salt and simmer for a further 2 minutes or until the mushrooms are tender. Stir in the rice and cream and heat through gently, stirring constantly.
