I will be making these again this St. Patrick's Day

Blarney Stones

 

1 1/4 cups sugar

1/2 teaspoon salt

4 eggs, separated

1 cup boiling water

2 cups flour

3 teaspoons baking powder

finely ground peanuts for garnish

 

Cream sugar and yolks of eggs well. Add boiling water,

flour, baking powder. Add beaten whites of eggs

(folding in) and any flavoring. Bake in flat oblong

pan (10 1/2x15 1/2x1). Bake 350 degrees for 30

minutes.

After cake has cooled, cut into squares. Spread each

cube with butter icing of your choice. Roll each cube

in finely ground salted peanuts.
