Guest guest
If he is concerned about the protein try having them eat edamame. They are 100% protein. I just starting getting them and my daughter (3) loves them. My son (4), on the other hand, has an aversion to anything green!! I like them to eat healthy but my daughter is on the skinny side and we are trying to fatten her up. I am sure I am confusing everyone at the grocery store when I am buying all soy products and than whole milk and those ensure drinks. I buy all of these foods that are obviously for a healthy vegetarian eater and then throw meat in the cart for the guys. One of these days I'll just tell hubby he'll have to buy it and cook it himself if he wants. I have purchased edemame, but my boys did not like it at all. My daughter and I were glad to have it as a good vegetarian protein though. regards, ~ Aisling
Guest guest
I use edamame in place of lima beans in a succotash type dish - I sautee diced peppers of all colors, corn & edamame in a bit of olive oil, season w/salt & pepper & voila.
