Papaya Kiwi Fruit Salad With Orange Dressing

 

1 papaya

4 kiwi fruit

6 tbsps. frozen orange juice concentrate, thawed

3 tbsps. honey

1 cup sour cream

1 tbsp. grated orange peel

1 tbsp. grated lime peel

 

Peel and remove seeds from papaya. Slice lengthwise

into

thin strips.

Peel kiwi fruit and cut crosswise into thin strips.

Arrange papaya and kiwi fruit on serving plate.

Combine orange juice concentrate and honey in small

bowl. Stir in sour cream. Spoon dressing over salad;

sprinkle with peels.

(Grate with a micro-zester if you have one).
