They're both from " Dr Neal Barnard's Program for Reversing Diabetes, " with recipes by Bryanna Clark Grogran. The first one was my favorite, but they're both really good & almost no work at all :^) Enjoy! Lemon Creme 1 12.3 oz package of reduced fat extra-firm silken tofu 1/3 cup Grade A (light) maple syrup or agave 3 tablespoons fresh lemon juice (I used more like 5 or 6, but I like tart flavors a lot) 1 tablespoons grated lemon peel Blend everything until very smooth & refrigerate in a covered container until chilled. (The notes say it's a good topping for fruit or cake, too.) Makes 1-3/4 cups (4 servings) ____ Berry Mousse 1 12.3 oz package of reduced fat extra-firm silken tofu 2-3/4 cups thawed frozen unsweetened berries of choice 3 tablespoons sugar or 2 tablespoons agave nectar 1 tablespoon berry liqueur (optional) Blend everything until smooth, spoon into 4 pudding dishes & refrigerate until chilled.
