I've been a vegetarian for almost 5 years, ever since the day my (then) 15-year-old daughter announced that she was becoming a vegetarian and asked if I wanted to join her. I did, although I assumed it would be a short-lived phase for both of us. We both love it! No one else in our family is vegetarian, although my husband and 3 other daughters (including my veg daughter's identical twin) have become much healthier eaters over the past 5 years. I live in a very small town in Minnesota, and my biggest challenge has been finding good quality ingredients. The nearest large grocery store is 50 miles away. I like to shop locally but the produce is quite limited here and even tofu is only rarely available. I found one package today and grabbed it--first time I've seen tofu in our town in weeks! How is the land of the thousand lakes? frozen still I guess at this time of the year.
