I just got done eating it for dinner and I have to say it is one of my favorite vegetarian meals I have tried. I hope you all try it and enjoy it! Tabby Hoppin Johns Burritos 1 tablespoon of light olive oil 1 cup chopped onions 2 cloves of garlic 2 cups chopped ripe, juicy tomatoes plus 1/4 cup of water or a 16 oz can of diced tomatoes undrained 1/2 teaspoon dried basil 1/4 teaspoon dried thyme 3 cups brown rice (anout 1 cup raw) 16 oz can of black-eye peas, drained and rinsed salt and pepper to taste 16 oz can of vegetarian refried beans whole wheat tortillas sour cream heat the oil in a large skillet. saute the onions over medium heat until translucent. add the garlic and continue to saute until the onions are golden. stir in the tomatoes, basil, and thyme; cook about 5 minutes and then add the rice and black-eye peas, stir well and simmer about 15 minutes. while this is simmering warm up the refried beans and tortillas. spread beans over tortilla and fill with the rice mixture and add a little sour cream and roll them up.
