Guest guest Posted February 28, 2007 Report Share Posted February 28, 2007 3rd fave Vitamins ABC Soup serves 6 freezes well if you omit the basil & add it fresh when you reheat 2 1/2 tsp olive oil 1 small white onion, diced 1 medium carrot, diced 1 stalk celery, diced 2 1/2 tsp dried Italian herb seasoning 6 cups veg broth 1 28-oz diced tomatoes with basil 1/4 medium green cabbage, cored & chopped (about 2 cups) 1/2 lb Swiss chard, tough stem ends trimmed, leaves & stems coarsely chopped 5 large garlic cloves, minced 1 cup packed chopped fresh basil leaves salt & fresh ground black pepper Heat oil in soup pot over medium heat. Add onion, carrot, celery and Italian herb seasoning; saute until vegetables are soft, about 6 minutes. Stir in broth, tomatoes and cabbage. Bring just to a boil, reduce heat to low and simmer until vegetables are tender, about 15 minutes. Stir Swiss chard and garlic into simmering soup base. Let bubble for 5 minutes, or until chard is tender. Stir in basil and season with salt & pepper to taste. Per serving: 117 calories, 4 g protein, 2 g fat, 22 g carbohydrates, 4 g fiber, 524 mg sodium, 121% vitamin A, 87% vitamin C, 10% calcium.
