Guest guest Posted February 28, 2007 Report Share Posted February 28, 2007 Garlicky Broth with Kale & Sweet Potatoes serves 6 2,561 mg Vitamin A, 84 mg Vitamin C 2 1/2 tsp olive oil 1 large onion, chopped 3 1/2 tsp dried Italian herb seasoning 6 cups veg broth 2 15-oz cans cannellini beans, drained & rinsed 1 lb sweet potatoes, scrubbed & diced 4 oz kale, tough stems removed, leaves coarsely chopped (about 4 cups) 12 medium garlic cloves, minced salt & fresh ground black pepper Heat oil in soup pot over emdium heat. Add onion & Italian seasoning; saute until onion is soft & golden, about 6 minutes. Stir in broth, beans, sweet potato and kale; bring just to a boil. Reduce heat and simmer low for 10 minutes. Add garlic to simmering base. Simmer until sweet potatoes and greens are tender, 15 - 20 minutes. Season with salt and pepper to taste. Per serving: 383 calories, 17 g protein, 3 g fat, 74 g carbohydrates, 13 g fiber, 264 mg sodium, 256% vitmin A, 140% vitamin C, 21% calcium.
