My coconut rice pudding is a hit with the family... and its so easy! 1 cup cooked rice (I slightly overcook the rice) Jasmine rice or regular long grain 1 Large pkg of Jello vanilla pudding (cook n serve) 1 can of cream of coconut/ or coconut milk (cream of coconut is very sweet) 2 cups of milk (you can add more to thin out the pudding) Whipped topping to garnish cinammon to garnish Basically you follow Jello pudding package directions using only 2 cups of milk. add can of coconut milk and cooked rice. cook until thick as you like. You can add more milk to thin out as needed. Put pudding in individual bowls or glasses (wine) and fridgerate until cool. I usually garnish with whipped topping and cinammon.
