Becoming a vegetarian - Tabitha

Hi you guys, I have been on here for a while, I dont say much but

occasionaly I will write down a recipie or 2, anyhow, I wish to become

a vegetarian but I find it so hard. My kids which are 5, 3 ,and 1 and

my husband, well they have been eating meat all there lives and so

have I. How do you stop? Do you really save on money? Vegetarian meals

seem to take a lot more time preparing then meat based meals, are

there any really good fast meals? If we did become vegetarians it

would be ovo, lacto ones. I absolutly hate tofu or any of the fake

meat so I want to avoid all that. If you guys could help me it would

be so great, thanks, Tabby

I understand. I am eating as a vegetarian and my husband and daughter do not

exclusively. I stopped eating meat right away and have not found it difficult.

I do find it cheaper to eat dishes of beans and rice than eating meat so I

actually have started buying as much organic products as possible. It all evens

out. All meals including fresh ingredients seem to take more time. I've found

that having peppers and even onions prechopped and frozen in 1/2 c portions

helps as well as precooking my beans in a pressure cooker and freezing 2 c

portions (approx. 1 can). I hate tofu too and don't much care for fake meats

but I love beans and rice. I would Highly recommend Rachael Ray's vegetarian

meals (I didn't see too much tofu in there). Also if you have a pressure cooker

that really helps cook the beans faster and you can make whole meals in them.

Lorna Sass has a good book called Vegetarian cooking under pressure. I will say

it has taken me a while and a lot of planning

and looking for recipes (This group's files and the library is a great

resource) but I am so glad I spent the time doing this. It is sooo worthwhile.

I feel better (and am helping my families health) and know I am helping the

environment by not eating meat.
