I make a double batch of bean burgers (nope they don't taste like the alternative meat products) and I freeze them. They are quick to pull out and make a nice burger in a bun with all the fixings and add a side dish. I dice up veggies and toss in the rice cooker with broth and rice, makes a great side dish and so much healthier than Rice A Roni. Check in your recipes files, we ever have a kids recipe folder. Try some of your favorite stand by meals with out the meat. Spaghetti w/ marinara sauce, add cooked spinach or mushrooms. Tacos with rice as more of a filler in place of meat along with beans, cheese salsa etc., vegetable omlets or quich.
