Grilled Potato Salad

 

2 pounds New Potatoes (14 to 16)

1/2 medium Red Onion, very thinly sliced

1/3 cup Extra Virgin Olive Oil

1/3 cup chopped Fresh Parsley

1 tablespoon chopped Fresh Oregano Leaves

1/2 teaspoon Salt

Fresh Ground Black Pepper

2 Cloves Garlic, finely chopped

 

Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan.

Add potatoes. Cover and heat to boiling; reduce heat. Cook 15 minutes;

drain and cool. Cut potatoes in half. Spray with cooking spray.

 

Preheat grill to medium heat. Grill potatoes 5 to 10 minutes or until

tender. Allow to cool. Cut potatoes into bite size pieces.

 

Gently mix potatoes and remaining ingredients.
