Tropical Sweet Potatoes 4 cups sweet potatoes, cooked butter or margarine 1 14 oz. can cream of coconut 1/2 cup flaked coconut, toasted Arrange sweet potatoes in well-buttered rectangular baking dish. Bring coconut cream to a boil; lower heat and reduce cream to 2/3 original volume. Pour hot coconut cream over prepared sweet potatoes; top with flaked coconut. Bake in preheated 350 degree oven until bubbly, about 30 minutes. Makes 10 servings. ______________________________\ ____ Now that's room service!
