*this dish is so simple and you can mix up the veggies to your liking*

 

Veggie Fried Rice

 

Sauce:

1 Tablespoons grated ginger root

4 cloves crushed garlic

1/4 cup soy sauce

2 Tablespoons brown sugar

2 Tablespoons olive oil

 

2 red peppers fine chopped

1/2 cup frozen corn

1/2 cup frozen peas

2/3 cup scallions

2 hard boiled eggs fine chopped

 

 

4 cups cooked brown rice

 

1. Make the sauce and set aside

2. Saute peppers when tender add corn and peas.

3. Add rice, saute, sauce, eggs and scallions to dish
