Brussels Sprouts With Lemon and Pine Nuts

Serves 8

 

Ingredients

 

• 1 cup pine nuts

• 2 lbs. Brussels sprouts, trimmed and halved lengthwise

• juice of 1 lemon

• 4 Tbsp. Olive oil

• salt and pepper

 

Directions

 

1. Preheat oven to 350ºF.

 

2. On a baking sheet, spread out pine nuts and bake 8 minutes, or until

golden-brown.

 

3. Steam Brussels sprouts until tender, about 15 minutes. Toss with lemon

juice, olive oil and pine nuts. Season with salt and pepper.

 

Each serving: About 202 calories, 8g protein, 12g carbohydrate, 16g fat (2g

saturated), 0mg cholesterol, 99mg sodium
