Guest guest Posted February 18, 2007 Report Share Posted February 18, 2007 Taco Soup 1 lg onion, chopped 1 pkg. taco seasoning mix 2 cups whole kernel corn, frozen thawed works fine 1 can vegetable broth 1 can black beans 1 can white beans 1 can fat-free refried beans 1 can diced tomatoes (Rotel or Mexican flavor) 1 can diced tomatoes (any flavor) Few corn tortillas cut into strips Saute onions in some oil. In a big pot and begin by putting the 2 cans of tomatoes in with the refried beans add all the other cans and the onions. (dont drain the beans - do drain the corn if canned.) Stir it up add the taco mix. Bring the soup up toj ust a boil (dont boil more than a moment). Cover and simmer for 1 hr. Just before you are ready to serve add the tortilla strips and cook 2 minutes and serve. ______________________________\ ____ The fish are biting.
