Guest guest Posted February 18, 2007 Report Share Posted February 18, 2007 Vegan Key Lime Pie from Jannequin Bennett, chef at the Jefferson Hotel Serves: 8 Preparation time: 1 hour INGREDIENTS 2 8 ounce containers Tofutti Better Than Cream Cheese (plain) 2 tablespoons soy milk 1 cup natural sugar 1 teaspoon vanilla 2 teaspoons grated lime peel 4 tablespoons lime juice 2 tablespoons cornstarch 1 9 inch graham cracker crust Sliced strawberries INSTRUCTIONS Preheat oven to 350 degrees. Blend cream cheese, soymilk, sugar, vanilla, grated lime peel, lime juice and cornstarch until smooth. Pour mixture into graham cracker crust, place on baking sheet and bake for 40 minutes.
