Guest guest Posted February 18, 2007 Report Share Posted February 18, 2007 Ukrainian Barszcz 8 cups water 8 ozs. mixed vegetables 5 ozs. beets 3/4 cup dried white beans or 1 1/2 cup string beans 3 medium potatoes 1 cup tomato puree or 5 medium tomatoes 1/2 cup to 1 cup sour cream 3 tbsps. flour salt sugar 2 tbsps. dill chopped chives Soak beans in boiled and cooled water for a few hours, cook in the same water. Grate vegetables and beets, cover with boiling water, prepare stock (if using string beans, cook with vegetables). When vegetables are tender, add potatoes cut in cubes and cook together. Rinse tomatoes, cook in separate pot, press through sieve. To soup stock with vegetables and potatoes add beans with water in which they have been cooked, add the tomato puree, bring to the boil, add sour cream and flour; add salt and sugar to taste, bring to the boil. Before serving add chopped greens. Serve with buckwheat groats or potatoes.
