Hi everyone. I need some help exhanging things for one of my favorite

recpies...that is, if it can be done.

 

For years, I had made a wonderful cream of chicken soup with curry and

coconut...but as I eat mostly vegetarian now, I was wondering if I

could substitute and am open to suggestions..

 

Here is the origional...

 

1 can cream of chicken soup

1 can ( use soup can ) half and half

2-4 teaspoons curry powder

mix well and simmer till flavors blend

do not boil.

serve in bowl with coconut on top.

 

Ok..any ideas???

Hi Susan,

 

What about a really good vegetarian chicken broth instead of the soup

and some light coconut milk instead of the half & half? If you add

Morningstar chik'n strips, I recommend adding them very late; to me

they seem to get a little mushy if they soak in a soup a long time.

This soup sounds like pure comfort food :) Let us know how the

conversion comes out; maybe you'll like it even better than the

original :)

maybe sub cream of potato soup? or make your own cream sauce thinned w/veggie

broth & add diced veggies & curry powder?
