Guest guest Posted February 14, 2007 Report Share Posted February 14, 2007 Vegetarian/Vegan 1 cup Basmati Rice (this rice is best for this recipe because it takes the same amount of time to cook as the pasta) 1 cup mixed small pasta ( I used Orzo, Gemelli, and tiny broken pieces of spaghetti) 3-4 cups veggie broth ( I used 2 Tablespoons Rapunzel Vegetable Broth . It is Vegan and has Tumeric which gives the rice and pasta a yellow color) Lightly brown the rice and pasta in a dry skillet. *Careful not to scorch. * I simmered mine for apx. 30 min. but I live at a very high altitude. Add broth and simmer until all of the liquid is absorbed and the rice and pasta is fluffy and dry. * You can also simmer the rice and pasta in the broth without pre- browning.
